Eat Well, Spend Less: $50 Grocery Gift Card Giveaway!

Have you enjoyed reading the Eat Well, Spend Less series? Even if no one has, I have to say it’s been so good for me – I’ve been seriously inspired by everyone’s strategies and ideas!

Think seriously inspired might be exaggerating? Here’s proof: in the past week, I have made yogurt, made frozen yogurt twice, made ricotta cheese, made mascarpone cheese with a quart of cream I got for on markdown for $2.99 at Sunflower Market, made fresh pasta for lasagna, made tandoori chicken using my fresh yogurt and the spices I bought a long time ago with the intention to make it, and made chicken stock using the back pieces of the chicken I cut up for tandoori chicken.

On my list still to do is pick up rennet and citric acid to make fresh mozzerella, make crepes (using my fresh mascarpone as a filling), use the organic pears I got on sale and the cranberries I have in the freezer to make pearberry sauce, and start wasting less broccoli by figuring out the best way to make Asian broccoli slaw by using the stalk.

Ah, yes – I have been seriously inspired, have you?!

Well, whether you’ve been inspired in the same way or not, I think you’ll like this next part: the Kroger family of stores (including King Soopers) has offered to give each of the bloggers in the Eat Well, Spend Less series a $50 gift card to give away! I’ve already mentioned that King Soopers is my favorite overall store, so I’m excited to be able to give such a cool prize away.

You can enter nine different giveaways on all the Eat Well, Spend Less blogs and have nine chances to win a King Soopers gift card! Entering is super easy; here’s the form! (If you are reading via RSS or email, click here to enter.)

  1. Please share that Asian broccoli recipe once you’ve perfected it! I just threw away three broccoli stalks this morning and had no idea I was wasting something edible!

I will! I’m still tweaking it, but I basically did this recipe: http://allrecipes.com//Recipe/chinese-broccoli-slaw/Detail.aspx

I just cut up broccoli, leaving as much stalk as possible (which is fine because Jeremy doesn’t like stalky broccoli anyway, lol!), and then shred it with the food processor to replace the “broccoli slaw” called for in the recipe. No clue how much it costs, but I figure either way, it’s a big WIN because otherwise I would have thrown it away!

I have caught the end of this Eat Well, Spend Less, but I am so excited to get caught up!! My husband and I have been on a weight loss journey for the past year. I have lost 90 lbs and he has lost 160 lbs!!! We both have quite a way to go, but it’s been fun so far. We have just discovered the power of coupons and I have been trying to find the right network of blogs for me. I wondered when we began looking at coupons if we would be able to keep up our good eating habits with the coupons and this series is PERFECT!!

How we save money (prior to discovering coupons): My husband works in the meat market at Brookshires and my stepmom is a Dept. Manager at Kroger. We find out about deals at both stores through those inside connections!! The trick is we have to have money when the special happens and that is not always easy for us. We have bought a LOT of markdown, almost out of date, meat over the past couple of years and it feels like we are at the mercy of people not buying something before it goes bad. Just in the past three weeks, we are getting better at the coupons and are having so much fun!!

I am following all of the bloggers on this series now through email and when our computer gets out of the pawn shop (ugh!!) I will be following everyone on Facebook as well.

    God Bless You All!!!
    Janet

Wow, congratulations on an awesome achievement, Janet! That’s awesome that you have “inside connections” at the store – I’m jealous. ;)
