It’s hot outside! I don’t know about you, but lately we’ve been eating simple meals that don’t involve much cooking–and many of those meals involve a green salad.
Fortunately, lettuce is a good price this week at Sunflower Market: $0.88 for red or green leaf, and $0.99 for organic romaine. Also, at King Soopers, romaine, bibb, red and green leaf are $1.00, and at Albertson’s and Safeway, romaine, red and green leaf are $0.99.
Eating the same green salad over and over can get a little monotonous. Here are some ideas for making that lettuce more exciting!
Serve it with a warm dressing.
This Wilted Lettuce Salad is a great basic recipe; try it as is or with hard-boiled eggs and/or thinly sliced radishes added! Be sure to toss the lettuce with the dressing just before serving as it’s best eaten right away.
Top it with fruit. Rachael Ray’s Green Salad with Strawberry Vinaigrette looks delicious, and it’s so simple to put together. (I think it would be extra tasty with some feta crumbled on top!) This Green Salad with Fruit, Sugared Almonds, and Orange Vinaigrette looks yummy too.
Make it a Caesar. Get a hot pizza so you don’t have to heat up the house, throw together a Caesar salad, and call it a meal!
Here are a couple of recipes for Caesar salad that require a bit more work than just opening a bottle of Caesar dressing and a bag of croutons: this recipe uses coddled egg and anchovies, and this one from Pioneer Woman involves making your own dressing and croutons. Both recipes are well worth the effort!
Add some meat. Cobb salads are great to serve when you want a complete meal.
