What To Make With What’s On Sale: Chicken Quarters

King Soopers is having a 3-day sale today (Friday) through Sunday, and chicken leg quarters are just $0.69/lb!

Buying chicken quarters might seem like a hassle, but it’s actually not that difficult to separate them before cooking.  Or you can simply prepare and serve the quarters whole.  Here are some recipe ideas for chicken quarters as well as thighs and drumsticks!

This easy recipe for Herb Roasted Chicken Quarters will leave your house smelling wonderful!  It’s simple enough for a weeknight meal but great for company as well.  The same recipe author has another variation, Orange Rosemary Glazed Chicken Quarters, that looks delicious, too!

This quick photo tutorial explains how to separate chicken leg quarters before cooking them.  Be sure to use a sharp knife when cutting through the joint!

Here’s a 5-star recipe for Chicken Adobo that calls for drumsticks and thighs.  You could choose to leave the quarters intact and add 15-20 minutes onto the cooking time.

These slow-cooker recipes, Crockpot Coq Au Vin and Crockpot Lemon-Artichoke Chicken, are two of my standbys.  Drumsticks or thighs (or both!) may be used for either recipe.

Rachael Ray’s Chipotle Chicken Thighs recipe looks amazing.  (Don’t let the length of the ingredient list scare you — the last seven ingredients are for guacamole!)  This would be a great recipe to make in large quantities and then freeze for future meals.
