It’s Friday — time for What To Make With What’s On Sale! It’s green chile season, and fresh chiles are in stores now. (Last week at Sprouts they were $0.69/lb…has anyone noticed the price this week?) Hatch green chiles are some of the best chiles you can get. They’re grown in Hatch, NM, and their season usually runs from late August to early October.
The aroma of green chiles roasting is one of my favorite things about this time of year! I shared some recipes and tips for using fresh Hatch chiles last year (including how to roast, peel, and freeze them.) Here are some more ideas to add!
In the previous green chile post, you’ll find this delicious recipe for Green Chile Stew. If you need a gluten-free recipe, here’s one that can be used as a sauce or as a base for stew.
This is one of my very favorite breakfast recipes: Huevos Rancheros. You can play around with it however you’d like — flour or corn tortillas, with or without beans, over-easy or hard eggs. Yum!
Here’s an easy-to-make breakfast dish, Green Chile Frittata. Try serving it with salsa and/or sour cream.
This recipe, Baked Green Chile Mac and Cheese, just might become your new comfort food. Green chile and ham are added to an already tasty dish to make it that much better!
Here’s an interesting way to use green chiles — Raspberry Green Chile Jam. This seems like it would make a great topping for chicken!
Do you roast your own chiles? What’s your favorite way to use them?

They were $0.99/lb at Sprouts on Wednesday, and around $1.29/lb at King Soopers recently, I think? The ones at sprouts were bigger than the ones at King Soopers, which I prefer because it makes it easier to roast them without completely charring the flesh of the pepper.
